Huge Congratulations to The Winner Of The Sandwich And Food To Go Category Sponsored By Sam Browne Foods At The Sammies

Our sponsorship of the Sammie Awards again this year has confirmed to us, just how much exceptional talent there is out there. We saw this from the early heats of the Sandwich and Food To Go Designer category, where entrants were asked to use our own Sam Browne Foods shredded duck to create the ultimate food-to-go lunch. As the regional heats progressed, contestants used our shredded duck ingredient in exceptional ways to create a commercially viable food to go lunch. Chefs showcased their talent with inspirational and innovative approaches to everything from traditional sandwich formats to more innovative boa buns and food to go pots.

The competition proved to be an interesting journey from all points of view, as the regional heats in the South East were cancelled, when lockdown took hold of the country. At Sam Browne Foods, we decided an innovative solution of our own was needed. This led us to holding this heat of the competition at our own development kitchens to help decide the deserving winner from some hugely talented entries.

We were overwhelmed by the incredible recipes that were created at every stage of the competition and congratulations to all the winners of the regional heats. Choosing the final winner was a daunting task, such was the level of creativity amongst some very accomplished chefs. One exceptional entrant to the competition was Gabriel Paruma with his imaginative and innovative entry “Simply Lunch Quack Attack”. Selected as the winner of the category sponsored by Sam Browne Foods, the honour of the British Sandwich and Food to Go Designer of the year 2020 is well deserved and this award recognises his remarkable talent. What is interesting about Gabriel, is that he had previously entered the competition a couple of times in the past, but without any success. At Simply Lunch, his role as a Technical Systems Supervisor rather than a product development specialist also made him an interesting entrant to the competition. Both his persistence and broader view of the food industry is remarkable and we wish him a long and successful career.

A big thank all the very talented chefs that entered the competition and to all involved. We look forward to seeing everyone again at the British Sandwich Association Industry Awards dinner to be held on the 4th November at the Royal Lancaster Hotel in London.

In the lead up to the Awards Ceremony, the search is on for the nation's leading sandwich and food-to-go designer. Using ingredients supplied by Sam Brown Foods, competition entrants create recipes which are enterered into the competition. A series of regional heats will be held throughout the country ahead of the grand finale, announced and celebrated at the awards ceremony.

Investment In Additional IQF Freezing Line For Cooked Products Doubles Our Production Capacity

Continuous investment in our processing and manufacturing facilities are at the very core of our business at Sam Browne Foods. We have recently installed a second IQF Freezing line, that enables us to freeze individual product components extremely quickly and to a very high quality. Not only does this process retain texture and flavour, it also preserves food very effectively. By installing a second IQF line, we have doubled our production capacity. This enables us to meet the challenges of fulfilling customer’s exacting specifications with fast turnaround. Our focus on investment at Sam Browne Foods reflects our commitment to our customers of offering the highest levels of manufacturing capability and expertise.

We were delighted to sponsor The Sammies, which are the British Sandwich Industry Awards that celebrate the very best of the sandwich and food-to-go sectors and encourages new product development in the industry.

Held on May 10th 2018 at the Royal Lancaster Hotel in London, we were pleased to sponsor the category of Sam Browne Foods British Red Tractor, Farm Assured, Pulled, Cooked Duck Sandwich Designer of the Year.

From a total of 100 duck recipes submitted across regional heats, we selected five winning recipes, that showcased our duck product. On the exciting day of the final heat, all five winners competed to produce a cooked duck sandwich.

The finalists in the Sam Browne Foods Cooked Pulled Duck category were as follows:

  • Kim Hartley, Mission Foods - Chubby Duck Gordita
  • Martin Willsher, Starbucks Coffee Co (UK) - Apple and Bramble Duck
  • Mike Crofts, Raynors - Ducking Delicious
  • Catherine Farrell, Greencore - Canadian Goose Duck

Congratulations went to Catherine Farrell, Senior Concept Developer at Greencore with her Canadian Goose Duck, who we chose as the overall winner.

Well done and a big thank you to everyone who participated. We were very impressed with the high standard of innovation and creativity shown in all the entries.
